Also here is last week's special recipe from Fox Valley:


Fox Valley Peach Tomato and Mango Salsa:
2 peaches - peeled, seeded and diced.
1 medium tomatillo - diced
1 large tomato - peeled, seeded and diced.
1 green onion thinly sliced -
1 mango peeled, seeded and diced.
1 minced sweet onion.
1 tablespoon chopped cilantro
1/2 teaspoon salt or to tast.
2-3 tablespoons fresh lime juice
3 ounces thai chile sauce.
stir all ingredients together. Chill in a bowl over ice. Serve within 24 hours - If adding crab - do so just before serving. Serve with chips, over grilled fish, shrimp or chicken.

Helena Market Days will provide a rent-free space to one non-profit group each week of market season for purposes of fundraising. The space comes with a pop-up shelter and an 8-foot table. Qualifying organizations include churches, schools, civic organizations and charities, among others. Preference is given to Helena non-profits but any Shelby County organization may apply. Please contact Bob Van Loan at bob75137@aol.com for information and applications.
