with Chef Chris Vizzina who is the Winner of the Silver Plate Award.

About our Chef:
In fact this is his fourth year to be nominated for The Silver Plate Award. This is award is given to the nations top college and university General manager /Executive Chef. This summer he was worked with Homewood City Schools and Mountain Brook Schools as part of their summer professional training workshop. He has trained over five hundred city and county school employees on how to utilize fresh herbs and vegetables through Jones Valley Teaching Farm.
He has also been part of Cooking for a Cause which was a dinner that benefits Healthy kids Healthy communities and The United Way.
He is planning on making a Summer Caponata and will also grill the vegetables instead of frying them and use a multigrain / whole wheat bread.

Eggplants

Multigrain or whole wheat country bread
Yellow onion

Helena Market Days will provide a rent-free space to one non-profit group each week of market season for purposes of fundraising. The space comes with a pop-up shelter and an 8-foot table. Qualifying organizations include churches, schools, civic organizations and charities, among others. Preference is given to Helena non-profits but any Shelby County organization may apply. Recipes from Chef Tamburello:
1. Grilled Veggies:
olive oil, salt, pepper and very thinly cut veggies - on grill - heat high - maybe 5 minutes....
2, Chicken Breasts:
Marinate in Italian Salad dressing (with balsamic vinegar), worchestire sauce and white wine.... cook on high heat on grill - fast - so it doesn't dry out.
3. Risotto:
Bring 5 cups of low sodium chicken broth and 1 1/2 cup of water to a boil in a large saucepan... reduce heat to medium low (this is your liquid)
Melt 2 Tablespoons butter/1 tablespoon olive oil in heavy dutch oven over medium heat
Add 1 finely chopped onion , and 1/4 cup of chopped pancetta, 1 garlic clove minced - cook until softened - medium heat - 5 - 7 minutes. Add 2 cups ARBORIO rice and stir frequently until grains are translucent around edges.... about 3 minutes.
Add 1 cup of dry white wine - and cook stirring until wine is fully absorbed. into rice. .. 2 - 3 minutes
Stire in 5 cups of hot broth mixture into rice - reduce heat to medium low and simmer until almost all liquid has been absorbed - and rice is just al dente 16-19 minutes. Stir twice during cooking.
Add 3/4 cup of hot broth mixture and stir gently and constantly until risotto becomes creamy - 3 minutes... stir in 2 oz of parmesan cheese grated... and 2 tablespoons of heavy cream. Remove from heat, cover and let stand for 5 minutes. Stir in 2 tablespoons of butter, 2 tablespoons each of chopped parsely, chopped chives and 1 teaspoon of lemon juice. Season with salt and pepper and serve immediately!
