Executive Chef Criss Smiley likes to refer to himself as a “local transplant.” He feels very much at home here in Helena, Alabama, but was born and raised in Uniontown, Pennsylvania, just south of Pittsburgh.

His first exposure to cooking came from his mother’s small restaurant in an old schoolhouse building
where he learned how to follow recipes and then began to develop the fine art of enhancing those with his own ideas. His own culinary schooling came from the school of experience. While working as a carpenter, the harsh winters did not supply a lot of jobs, so he went to work at a local hotel and put his cooking skills to use. This was the beginning of a long career in restaurants, resorts, entertainment complexes and hotels.
 Criss was the largest outside content contributor to Hoffman Media’s book The Entertaining Touch. Some of his recipes can be also found in that book and in subsequent Hoffman Media magazines. He retired earlier this year from the Doubletree Hotel. In 2017, Criss will be opening Smiley Brothers Specialty Foods, a specialty butcher shop with cheeses and ready-to-heat meals-to-go
